Ingredients for the grilled salmon :
- Fresh salmon fillets
- Olive oil
- lemon wedges
- Salt and pepper to taste
Ingredients for the potato salad :
- 500 grams potatoes or boiled potatoes, cut into cubes
- 4 spring onions, finely chopped
- A handful of finely chopped fresh chives
- 4 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Preheat your nomadiQ barbecue to medium.
- Grill potatoes with salt and pepper until golden and cooked through.
- Remove from the grill and cool in a bowl.
- In the same bowl, combine the potatoes, spring onions and chives.
- Add the mayonnaise, Greek yogurt and lemon juice.
- Season with salt and pepper to taste. Mix well and cool in the shade or, if possible, in the fridge.
- Brush salmon fillets with olive oil and season with salt and pepper.
- Place the salmon on the grill and grill for a few minutes on each side until it reaches the desired doneness.
- Squeeze fresh lemon juice over grilled salmon fillets.
- Remove from grill and serve with potato salad.
