Bring the Mediterranean atmosphere into your home with this delicious barbecue recipe: grilled sardines, a delicious eggplant salad and enjoy fresh bread with tzatziki on the side. Celebrate with a glass of wine and enjoy!
Ingredients:
- Freshly cleaned sardines or two tins of sardines
- Olive oil
- Salt and pepper to taste
For the eggplant salad :
- Eggplant, sliced
- Cherry tomatoes, halved
- Red onion, thinly sliced
- Fresh parsley, finely chopped
- Lemon juice
- Extra virgin olive oil
- Salt and pepper to taste
For the tzatziki :
- Greek yogurt
- Cucumber, grated and drained
- Garlic, finely chopped
- Fresh dill, finely chopped
- Lemon juice
- Salt and pepper to taste
- And your choice of fresh bread, sliced
Instructions
- Start with the tzatziki. Mix the Greek yoghurt, grated cucumber, garlic, dill, lemon juice, salt and pepper in a bowl. Set aside in the refrigerator to allow the aromas to infuse.
- Preheat the BBQ over medium heat and grease the grill grates with a little oil. Use absorbent paper or a brush for this purpose
- Place the eggplant slices on the grill and brown for 3-4 minutes on each side, until tender and golden.
- Cut the grilled eggplant into pieces and mix with the cherry tomatoes, red onion, parsley, lemon juice, extra-virgin olive oil, salt and pepper in a bowl. Set aside
- Brush both sides of the sardines with olive oil and season with salt and pepper.
- Place the sardines on the grill and fry for 5 minutes on each side, until cooked through and lightly charred.
- Remove the sardines from the grill and arrange on a serving platter.
- Briefly toast bread slices on both sides until lightly crisp and golden.
- Serve grilled sardines with eggplant salad, tzatziki and toasted bread.

4 tea bags of your choice (e.g. green tea)
1 cup fresh pineapple, diced
1 tablespoon freshly grated ginger
1 tablespoon honey (optional)
Ice cubes
Instructions:
- Prepare tea according to package instructions
- Add pineapple cubes, grated ginger and honey to hot tea.
- Leave the mixture to cool, then place in the fridge to chill completely.
- Pour the iced tea over ice cubes in glasses and serve with the dish.
