Ingredients:
2 tablespoons mustard
2 tablespoons maple syrup
1 teaspoon freshly chopped rosemary
1 tablespoon grated lemon or lime zest
1 salmon fillet (wild-caught) with skin (2 pounds, about 1½ inches thick)
Instructions for use:
Mix mustard, maple, rosemary, lemon or lime, half a teaspoon of salt and pepper. Season the entire flesh side of the salmon with this mixture. Leave the marinade to soak at room temperature for half an hour to an hour.
Arrange the whole salmon, skin side down, on the racks of the nomadiQ baking sheet. Theclosed griddle is also very useful for frying fish. Grill over medium heat until the salmon is cooked and the skin is nicely toasted. Turn it over from time to time. This will take about 10 to 15 minutes, depending on the thickness of the salmon. Garnish with a little finely chopped spring onion.
Optional. Grill two lemon halves on the other side of the nomadiQ BBQ until lightly charred, then press them onto the salmon when ready.
Accompaniments for Salmon BBQ
Serve with grilled asparagus. Marinated in a subtle blend of garlic, virgin olive oil, balsamic vinegar, salt and pepper. Garnish with grated Parmesan.
